Cured cheese with a firm texture.
Pasteurised cow’s milk.
Ripening process: more than 5 months.
Best consumed within: 12 months.
Storage temperature: 0-8ºC.

 

Ingredients
Pasteurised cow’s milk, stabiliser: calcium chloride, rennet extract, E-1105 (EGG), lactic fermenting agents (MILK), salt. Rind (not edible): preservatives (E-202, E-235), colourant (E-150d).

Product feature
Cuboidelepiped shaped, with squared edges and corners.

Brownish yellow colour. Very small irregularly distributed eyes.

Firm and hard texture, not stringy, holds its shape, and in more advanced stages of ripening, crumbly yet sticky when cut. Grainy.

Moderately strong smell of cow’s milk with hints of melted butter, leather and roasted hazelnuts.

Strong aroma with hints of butter, potato, roasted hazelnuts, leather, meat broth and aged wood.

Intense sharp and salty flavour.

Pale yellow rind.
